Sweet Potato Casserole Recipe

 Ingredients:

4 lbs Sweet potatoes or yams (peel & cut, bite sized)

2 c. orange juice

3 c. light corn syrup

1 tsp. ground cinnamon

1 tsp. ground nutmeg

1/4 c. vanilla extract

2 tsp. lemon zest

2 tbsp. flour

1 1/2 c. light brown sugar

1 1/2 c. granulated sugar

Sweet Potato Casserole-Candied Yam Casserole 

Directions:

Preheat oven 375

Boil potatoes (yams) until under cooked (cool)

in a large bowl, whisk together orange juice, corn syrup, cinnamon, nutmeg, vanilla extract and lemon zest.

in another bowl-whisk flour and both sugars together

put cooled sweet potatoes (yams) in a deep dish, add dry ingredients stir to coat
